- 5 gals. water
- 1 lb. Dark Crystal malt (120l)
- 1 lb. chocolate malt
- 1 lb. roasted barley
- 6 lbs. Uncle Roys dark extract
- 3 lbs. clover honey
- 2 oz. Saaz hops (4 a.a)
- 1 oz. Hallertauer hops (5 a.a)
- 0.8 oz. Cherry extract
- 0.8 oz. Milk chocolate extract
- 7 g Cooper's ale yeast
Boil malts, barley, dark extract, honey and 1 oz hops for 45 minutes.
Remove from heat and add 1 oz hops.
Steep for 10 minutes.
Strain and add cherry and chocolate extract.
When cool, pitch yeast.
