Belgian-Style Wit

Ingredients for 5 gallons:

  • 6 lb. Wheat Extract
  • 1 lb. Light Belgian Candy Sugar
  • 2 oz. Halertau Hops (3.2 alpha acid)
  • 1/2 oz. ground fresh coriander
  • 1 oz. bitter orange peel
  • 1/2 oz. McCormick's orange peel
  • 1/2 oz. fresh grated ginger
  • 1 pkg. Wyeast #3944 Belgian Wit
  • 1 cup corn sugar

Bring water to boil and disolve the wheat extract, candy sugar and hops. Bring mixture to a boil again and boil for 60 minutes. Add coriander, orange peels, and ginger during the last 15 minutes. When wort cools to 75°F, pitch yeast. When fermentation is complete, rack to bottling container and add priming sugar dissolved in boiled water. The resulting wit will have a high carbonation.
